We slow-cook fruit to preserve its natural vibrance, pour it into delicate sheets, and hand-cut the jelled fruit into tender, shimmering squares. The balanced tart-sweet character of the fruit shines in each piece, with vivid flavors and hues coming purely from fruit, never from artificial colors or flavors or even extracts or essences.

A Celebration of Pure, Ripened Fruit

Lushly ripened fruit, sugar, acidity, and pectin. The ingredients for pâte de fruit made centuries ago are the same ingredients we use today in ours. We use traditional cooking methods, slow-simmering over an open flame, constantly stirring until softly set, then pouring and cutting by hand. Bursting with bright fruit and its delightful tang, these jelled confections are perfect in their time-honored simplicity.

All our gourmet chocolates and pastries are made with only natural ingredients and without artificial colors, flavors, or preservatives.
